Oh my goodness !! yes yes yes. This was our lunch today and it was totally demolished by my tribe of boys ( and me !! ). Sweet potato chips and guacamole. Why did I not think of this sooner ?? I was inspired by a recipe shared by Becomingness but I did not have everything in the recipe so I just used what I did have and it was AMAZING !!
Added bonus, it is National Nutrition week. Take the challenge and try for 5 serves of fruit and vegetables a day……..
- 2 large sweet potatoes (approximately 1.5 kgs), washed and peeled
- 3 tablespoons organic butter, melted
- 1-2 tablespoon garlic powder
Cut sweet potato into chips, spread onto a baking tray and cover in garlic butter mix. Bake for 30 minutes ( or in my case until soft as my oven is so darn old !! ).
- 2 large avocados
- 2 tablespoons lime juice
- 3/4 cup cherry tomatoes chopped into small bite sized pieces
- pinch of salt
- pinch of pepper
Mash avocado. Add lime juice, tomatoes, salt and pepper and mix . Serve on top of cooked fries !!
