I made these nut free museli bars last week and they were so delicious they never actually made it to the school lunch boxes !!
Give them ago for yourself but make sure you cook them a little longer than you think so they stay together and are easier to cut into a bar ( otherwise it makes a crumble which actually is amazing on coconut yogurt !! ).
1 cup rolled oats
1/4 cup pepitas
2 tablespoons chia seeds
2 tablespoons sunflower seeds
1/2 cup shredded coconut
3 tablespoons coconut oil
1/3 cup honey or rice malt syrup
1 teaspoon vanilla extract
Mix oats, pepitas, sunflower seeds, chia and coconut.
In a separate bowl heat coconut oil, honey, and vanilla and bring to the boil.
Combine the wet and dry ingredients.
Press firmly into a 20cmx 20 cm tin.
Pop into over to bake at 160c for 20 minutes
Remove and allow to completely cool on the tray before cutting or moving.
Store in an airtight container and Enjoy.
